Boosted scrambled eggs

One of my favourite breakfasts is scrambled eggs. Eggs are high in protein and loaded with essential vitamins, minerals and good fats. They also contain choline, which is important for brain health and healthy cell membranes.

 

The theme of this year’s National Nutrition Week is ‘Try for 5’, which encourages people to increase their vegetable intake by aiming to eat 5 serves of vegetables a day.

 

The easiest way to do this is to include vegetables with every meal, including breakfast!

 

Here are two simple ways you can give your scrambled eggs a nutrient boost and increase your veggie intake at the same time:

 

  • add salad vegetables to your plate, e.g. tomatoes, cucumber, baby spinach and avocado (extra vitamins, minerals and good fats)

 

  • sprinkle with dulse flakes (a type of seaweed, available online) or strips of nori (extra iodine, iron and potassium)

 

Delicious – and nutritious! (and only takes 5 minutes to prepare)
