Mexican Bowl

A quick and easy nutritious dinner for Meat-free Monday!

I try to do meat-free Monday most weeks and this meal is a favourite with my daughters. It takes less than 30 minutes to prepare and contains a good balance of healthy carbohydrates, protein, fibre and good fats!

Ingredients:

1.5 cups of rice

2 tsp bone broth powder (optional)

400g tin 4 bean mix

2 cups passata

300g tin corn kernels (or frozen corn)

1/2 tsp garlic powder

1/2 tsp onion powder

1 tsp sea salt

1 tsp ground cumin

1/2 tsp ground pepper

1/2 tsp ground paprika

1/2 tsp dried oregano

Plain corn chips (preferably organic)

Sour cream

Cherry/grape tomatoes

Capsicum and cucumber

Grated cheese

Avocado

Method

1. Cook rice as per instructions (optional: add 2 tsp of bone broth powder to the cooking water to give it a nutritional boost!)

2. Combine the beans, passata, corn and spices in a small pan and cook over a low heat for 10 minutes

3. Assemble in bowl as shown, starting with the rice on the bottom.

4. Enjoy!
